Tapas cake with courgette
(For 1 loaf tin, 25 cm in length)

1 large courgette, sliced lengthways into 3-4 mm slices
800g pointed peppers, red and yellow, sliced into strips
1 onion, sliced into strips
2 tbsp olive oil
6 eggs, separated
2 cloves garlic, finely chopped
200g grated Manchego cheese
1 Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line the loaf tin with grease-proof paper.
2 Blanch the courgette in salted water for around 1 minute, quench in cold water and pat dry. Line the base and sides of the loaf tin with the courgette slices, so that they overhang slightly.
3 Fry the peppers and onion in hot oil in a frying pan for 2-3 minutes. Take off the heat and leave to cool.
4 Beat together the egg yolks, garlic, cream and cheese. Stir in the peppers and onion. Whisk the egg whites with a pinch of salt until stiff and fold into the mixture. Season with salt and ground black pepper and tip into the tin. Fold over the overhanging courgettes and bake in the oven for around 1 hour until golden brown.
5 Turn out of the tin and serve, warm or cold, cut into slices.

Tips: There is a Spanish pil pil spice seasoning mix that can be used for the recipe. However, it’s not available everywhere

Cooking time: Approx. 5 min
2 cloves garlic, finely sliced
1 unwaxed lemon, zest and juice
2 – 3 dried chillies, crushed
250ml olive oil
800g king prawns, deveined and peeled apart from the tail
1 tsp sweet paprika
2 tbsp freshly chopped parsley
1 Heat the garlic with the lemon zest, chillies and olive oil in a ceramic dish suitable for use on the hob.
2 Mix together the prawns, paprika, lemon juice and parsley and add to the hot oil. Season with salt and ground black pepper and cook, tossing or stirring, for 4-5 minutes until cooked through.
3 Before serving, check the seasoning. Serve in individual portion-sized dishes if desired, with white bread.
